Brillat-Savarin manufactured and refined in Burgundy

Soft cheese 72% fat in dry matter or 38% fat on total weight. This Brillat Savarin is produced in Burgundy in the tradition of old products where the milk fat cows were used to transform it into cheese sold in regional markets. The cheese Saligny perpetuates the tradition by developing from enriched cow’s milk cream; its slow curdling (15 hours) gives it a particularly fine, smooth texture; white down to straw and a subtle nutty taste appear after a refining week.
